.How to get there
The reception at freshly renovated Convivio is exceptionally sincere, reflecting the heart and soul at the core of Jérôme and Nadine’s work. The cuisine is regional and candid, the locale puristically arranged after a small renovation.
Everything revolves around the product, which is why a lot of value is placed on the regionality, transportation, and ethical treatment of animals. Jérôme and Nadine personally know each of their suppliers, promoting friendly and transparent teamwork.
Jérôme surprises us with four courses, beginning with a poached egg and buckwheat served two ways, cooked and popped, along with green beans, pineapple tomatoes, lemon gel, and parsley. Perfectly cooked and full of exciting flavours.
The onion tartlet with kale, mixed mushrooms, and blue jersey froth is an excellent dish for an autumn evening. The Lake Biel zander with artichoke bottoms, pumpkin puree, and pumpkin crisps is equal parts surprising and delightful in taste!
The wine list offers a variety of exclusively European wines. Because the wine plays an important role alongside the food at Convivio, there are no fixed wines served by the glass. Rather, there is a regularly changing selection whereby even guests can sometimes determine which bottles will be opened that day.
We begin with a German Blanc de Blancs sparkling wine and sample various vintages from France to Spain and Portugal. Wine lovers should definitely check out the different events at the restaurant at which different winegrowers present their wines.
After our excursion to different wine regions, we finally return to a tepid chocolate cake, one of my favourite deserts! Interpreted slightly differently today, with curd, wild brier pulp, a hempseed tuile, and raw cocoa nibs. A dream!
