The recent opening of Milchbar by Michel Péclard, the creative mind and proprietor of numerous other innovative gastronomy ventures in Zurich, is simply another stroke of genius. There is a lot to discover here. Above all, a lot of new surprises: from the delicatessen and coffee atelier, to a bar and restaurant, and not least a 1-room hotel. One after the other.
I located the Milchbar without a problem: between Bürkliplatz and Paradeplatzon the side street Kappelerstrasse. Torn between the options of the deli and coffee studio, I ventured into the latter. I first notice the siphon coffee machines. "With these I make the world's best coffee", says Nina Rimpl from behind the counter with a radiant smile. And she should know, after all, being the newly crowned national barista champion.
Behind this is a science in itself, I realize, as she gives me a serious introduction into this special brewing method. For a long time the method was celebrated in Japan and in recent years more and more cities have become enthusiastic followers. Full of curiosity, I tried the special brew. And indeed, it tasted great! To my surprise, the coffee is served with a shot. Not an alcoholic one, but a wheatgrass shot, which was also made with a special machine.
For this particular acquisition Michel Péclard traveled with business partner Florian Weber especially to New York. The power that this extraordinary drink provides fully justifies the effort. Here vitamin rich juices and smoothies, gluten-free muffins, brownies and sandwiches are served. Everything also available "to go", and during the week as early as 5 o’clock in the morning.
At the Milchbar, moreover, not only the health-conscious are catered for. The bar on the first floor offers after-work drinks and tastings of very fine wines from still unknown smaller European wineries. As a culinary accompaniment, delicacies are on offer at the delicatessen counter.
Starting with wonderful cheeses, fresh cut meats, and salmon to Noix gras and Rillettes to satisfy many a palate. Incidentally, a wonderful gift for the next invitation can be found here, with cheerful packaging on offer – their own designed polka dot cotton bag.
Oh, and before I forget to mention - the 1-bedroom hotel is designed by Max Zuber and will open in spring 2015. It cannot be booked, one must bid for it. Good luck with the bidding!
