The term comfort food encompasses more than just hearty dishes and sweets. It generally describes food that is associated with a sense of well-being. In other words, healthy dishes that are good for the soul. Dominik Wachter, a native of Prien, stands for culinary delights that are as refined as they are regional with his food bar of the same name in Chiemgau. As a fine-dining establishment in a tranquil town outside Munich, it opened at the end of 2022 and was awarded its first Michelin star barely six months later.
"Almost everything I cook comes from the best producers in the region. The rest - lemons, oysters or the finest chocolate - from all over the world. I'm all about good food and the finest culinary creations that are fun to eat," says the owner.
You can choose between four and six courses at the Wachter Foodbar. The menu changes every four weeks and stands out not only for its excellent taste but also for its beautiful appearance. For example, butter and parts of the amouse bouche are served on mini wooden logs as well as finely polished, cleaned pebbles that come from Lake Chiemsee.
Regionally made ceramics serve as tableware, and each course is adorned with tiny herbs and flowers that star chef Dominik Wachter regularly goes to collect himself.
For his locally inspired cuisine, he regularly roams the surrounding forests and meadows of his home, Prien am Chiemsee: "I collect mushrooms, wild herbs and nuts myself. When choosing my dishes, I let myself be inspired by smells and flavours, colours and emotions."
From components such as asparagus, egg yolk, lemon and wild herbs, he conjures up an aromatic starter. Kalamansi, cucumber and jalapeno combine to create a little refreshment before the surf'n'turf main course: prawn tartare and beef tenderloin with field beans and peas.
The Wachter Foodbar serves food within a modern counter concept. This means that there is an oval bar in the middle of the small dining room where you can take a seat. A handful of high tables around it complement the seating. Muted tones and fir-green colour accents reflect the natural component of the star restaurant.
Transparency is also the order of the day when preparing the menu. You can peek into the kitchen of Dominik Wachter and his team thanks to a glazed front. "We are a product kitchen that works with great craftsmanship and creativity. I want to offer my guests the finest culinary creations that are fun to eat," says Dominik Wachter.
The young chef from Prien has succeeded in this. His star-level food in a casual-chic atmosphere is definitely comfort food!
