Head chef Manuel Faltermeier places just as much emphasis on exciting flavours as on culinary variety.
They say that there is magic in every beginning. Opening your own restaurant is no exception! In spring 2023, Munich chef Manuel Faltermeier opened his restaurant Ma'Roots in the Hofkücherl - and has been focusing on surprisingly fine cuisine with a magical effect ever since.
True to the motto "Taste honesty", the menu features dishes made exclusively from local and seasonal produce. This means, for example, wild garlic in spring, tomatoes in summer, chestnuts in fall and red cabbage in winter. "We focus on the responsible use of natural ingredients and use them to develop creative, original compositions," explains Ma'Roots head chef Manuel Faltermeier.
Together with sous chef Manuela Holzbauer, he serves fine multi-course menus as part of a Chef's Table on Wednesday to Saturday evenings. "We always come to our guests' tables ourselves and explain what we have in mind for each dish. Our mission is to bring the best natural food that Bavaria has to offer to the plate," says the owner.
This results in aromatic combinations like lettuce hearts with nut butter foam or an oat sandwich with bergamot parfait for dessert. Everything tastes as fantastic as it looks. Ma'Roots owner Manuel Faltermeier discovered his penchant for local ingredients and fermented foods while working for star chef Holger Stromberg's food tech manufacturer Organic Garden.
Incidentally, the restaurant's name outside Munich loosely translates as "my roots". "The addition in Hofkücherl is, in turn, a tribute to the restaurant of the same name that used to be there," explains Manuel Faltermeier. Guests now dine in a 300-year-old farmhouse with a rustic, casual atmosphere - the perfect backdrop for today's traditional yet ultra-modern cuisine.
The food quality is just as impressive as Melanie Wimmer's attentive service: guests are greeted with a fragrant towel for their hands, water is always topped up, and expert advice is given on accompanying wines.
