A master of reduction to the essentials is the baker Julius Brantner. He knows his craft, the art of shaping dough into crusty yet airy bread that stays wonderfully fresh for up to five days.
His eponymous shop Julius Brantner Brothandwerk has been a fixture in Munich's delicatessen world since 2019 - and not just for home use. Even Michelin-starred chefs like Jürgen Wolfsgruber from Sparkling Bistro or fine-dining restaurants like Peter Wiedner's Doma exclusively offer their guests Julius Brantner's dough creations.
However, the native of the Black Forest does not make a secret of his ingredients and technique. In fact, with two glassed-in baking rooms, he invites anyone interested to get an impression of his craftsmanship.
"Every location is shared on Instagram, but bakeries? They appear far too rarely," says Julius Brantner. He has been fine-tuning his bread's recipes and resting times for years. He learned his craft from his family - all master bakers - and on his travels around the world.
Only regional and organic ingredients go into his pieces of bread, no baking accelerators, as is often the case. Hence the complete glazing: "I have nothing to hide".
Currently, in addition to rolls, the fixed assortment consists of bread such as sourdough and Munich loaf with a perfect crust. Other changing, savoury dough creations: on Tuesdays, the organic grain ciabatta, on Wednesdays an organic French country bread, on Thursdays an organic walnut sesame bread and on Fridays the organic Grandpa Walter's grain bread.
Those who prefer sweet food will also find what they are looking for at Julius Brantner Brothandwerk. There are butter croissants (Fridays and Saturdays), cinnamon-cardamom buns (Wednesdays) and almond croissants (Thursdays) - all organic and all delicious!
In the bright, modern bakery, with its blue-orange colour scheme and wooden and brass elements, there is also a selection of spreads, yoghurts and butter on the shelves, ideal for breakfast at home or a snack on the go.
