Paul Wald, master confectioner born in Königsberg in 1905, came to Berlin in 1939. He gained quick recognition and, together with his wife Irmgard, opened up a small marzipan shop on Pestalozzistraße in Charlottenburg. It can still be found there today, in number 54A, and all confectionery compositions from Königsberger Marzipan to classic pralines are based on original recipes. And every praline, every tea or coffee cake, every marzipan loaf and potato is actually handmade.
Obviously no additives are involved and the sugar content is supposed to be very low. I only ‘suppose’ because you can never actually know for sure - the family recipe is a very well-kept secret. It’s been in use for more than 100 years and the marzipan still gets its typical Königsberg twist through a mysterious flaming procedure at the end.
Ever since I can remember, my mother has loved this marzipan adorned with browned ornaments. I cannot imagine a festive goodie plate without those little sweets. Those who are as much a fan of this almond specialty as I am should take the time to stand in line and wait. Because, trust me, whatever you’ll bring home it will most definitely be worth each minute of your patience. I do not know of any better Königsberger Marzipan.
